sweet boondhi

Happy Diwali / Deepavali to all my friends, readers and blogging friends.May the light brings more prosperity in all our lives. To celebrate this occasion I share with you all a easy sweet recipe, yes it is Sweet Boondhi.

Ingredients:
  • Besan flour-1 cup
  • Rice flour-1 tbsp
  • cooking soda-a small pinch
  • Sugar-3\4 cup
  • water-1\2 cup
  • Ghee-2 tsp
  • cashew-few
  • Cloves-2
  • Cardamon powder-1\2 tsp
  • oil to fry

Method:

1.In a bowl add both flour, cooking(baking) soda and mix.slowly add water and form a thick batter.

2.Heat oil in a pan, place a perforated ladle over  the oil, pour a ladle of prepared batter over the perforated ladle and spread it well so that it forms balls and drop in to the hot oil.Just fry them( not needed to be crispy).

3.Drain the excess oil.Do the same for all  batter.Add sugar and water in another pan and make sugar syrup.Boil till it reaches one string consistency(check it by pressing between fingers,it will form string). Then switch off.

4.To the warm sugar syrup add the fried boondhi.Ghee fried cashew and cloves were also added. Also add cardamon powder and mix well.Leave it for some time for the boondhi to absorb the sugar syrup.

Tasty sweet boondhi is ready.Store or enjoy.

Happy Diwali once again.

Note:

1.the batter consistency is important, if it is thin it will fall flat and if it is thick it will form tails. So adjust accordingly.

2.You can add some colours to the batter and make it colourful.
