Cucumber Pachadi | cucumber yogurt based gravy


As the temperature is raising i get irritated to stay in kitchen and work long so decided to go on with quick and easy recipe.this pachadi is one such easy one.




Preparation time: under 10mins
cooking time:under 15 mins
serves-2

Ingredients:


  • cucumber-1,mediun sized
  • oil-2 tsp
  • mustard-1 tsp
  • onion-1,chopped
  • Yogurt-1\2 cup
  • coconut oil-1 tbsp(optional)
  • curry leaves-few
  • salt to taste


To grind:


  • Grated coconut-1\3 cup
  • green chilly-2
  • jeera-1\3 tsp




Method:

1.Grind the ingredients under " to grind" to a fine paste with little water.Clean the cucumber,remover the seeds(eat it raw) and dice it in to pieces.


2.Heat oil in kadai,pop out mustard,then add onion ,curry leaves and saute for a while.Then add the diced cucumber pieces.Add 1\4 cup water and cook for a while.

3.When cooked add the ground paste ,salt and cook till raw smell goes.Then switch off.when it has cooled a well add in the whisked curd/yogurt and mix well.Add some coconut oil on top(its purely optional).



Serve with rice.
