Olan - Ash Gourd & cow peas in coconut milk | Onam Sadya Recipe

Olan is one of the dishes in the Onam Sadya menu which is nothing but cowpeas and ash gourd( white pumpkin) cooked in coconut milk. It absolutely has no spice and tastes yummy with the added coconut oil.I made this for this new year. You can also add a yellow pumpkin with it.

Ingredients:


  • Ash gourd/white pumpkin-1\4 kg
  • cow peas/ thattapayur -1\2 cup
  • Thin coconut milk-1 cup
  • Thick coconut milk-1\2 cup
  • green chilly-2 ,silted
  • Coconut oil-2 tbsp
  • salt to taste
  • curry leaves-few






Method:

1.Soak the peas over night or up to 6hrs.Pressure cook it with a cup of water for a whistle.It should be cooked and retain its shape.Drain it and keep ready.May reserve the water for other cooking purpose.

2.Peel the skin of the ash gourd discard the seed and cut into cubes of 1 inch .

3.Add this to a kadai along with thin coconut milk ,green chilly and little water and cook till its cooked(it must be cooked and retain its shape).




4.Add the cooked cow peas and salt to it.Let it boil for few seconds.Then add the thick coconut milk.

5.When its about to boil switch off,drizzle the coconut oil over it along with curry leaves
.

Tasty olan is ready to be served with warm rice.



Note:

1.Don't over boil after adding thick coconut milk as it may curdle.

2,You can add also add yellow pumpkin along with it.
