Stuffed Brinjal / Egg plant | Bharli Vangi | Eggplant Recipe


My daughter  insisted  to buy more brinjal when went to buy veggies last time.On returning she took a brinjal stuffed dry powdered microwaved and eat it.She asked me to make this yummy stuffed brinjals.I made it for her and it was sooo tasty.



Preparation time : 15 mins
Cooking time: under 30 mins
Serves: 3

Ingredients:


  • Brinjal/egg plant-10 to 12 ( small n tender)
  • Onion-1
  • Tomata-1
  • Garlic pods-3
  • Red chilly powder-1 n 1\2 tsp
  • corainder powder-1 tsp
  • jeera powder-1\2 tsp
  • turmeric powder-1\2 tsp
  • Garam masala-1\4 tsp
  • Salt to taste
  • Oil- 4 tsp


To roast and grind


  • Peanuts- 1 tbsp
  • white sesame/til seeds-2 tsp
  • grated coconut-3 tsp



Method:

1.First dry roast peanut and sesame seeds well lastly add coconut and switch of.Roast coconut in the heat that prevails there.Coo and grind to a fine powder.

2.To the grounded powder add all dry powders and required salt.add water and make a paste of it.



3.Clean the egg plant well.Take a piece make slits at the bottom as show and immerse in water.Do it for all.Stuff the made paste to each brinjal and keep ready.


4.Heat oil in a pan  add garlic and onion, saute till it becomes translucent then add tomato,cook till it becomes mushy.

5.Then add all stuffed brinjals one by one and the prepared masala( if u have) to it.Close and cook for a while.Check for salt.Switch off when everything blends well.




Serve for roti/chapathi or even rice.




Note:

1.Adjust the spice powder according to ur taste buds.
