Unniappam | Kerala Dish -Easy method

Unniappam is one of the famous authentic kerala recipe its so easy to make and having kids in home i make daily a new snacks for them as they get bored with the regular one.These appam i made few weeks before  my daughter who is a critic of my food loved it more and ate most of it.I also have another variety of panniyaram using wheat flour check it out here.



Ingredients:


  • Rice flour-1 cup
  • jaggery-1\2 cup (adjust according to ur taste)
  • Over riped Banana-2 (any variety)i used small ones
  • Water- as needed
  • oil- to fry them.
  • baking soda- a pinch
  • coconut pieces
  • ghee to fry coconut pieces





Method:

1.Melt jaggery with little water and filter the  impurities.Mash the banana well.

2.In a mixing bowl add rice flour,b.soda,mashed banana and mix well.slowly add jaggery syrup and make it to a batter similar to idli batter.

3.Fry the coconut pieces in ghee and add to it.



4.Heat panniyaram pan with oil,scoop out the batter in each hole and cook.When done on one side turn and cook on the other side.

5.Drain excess oil and serve the unniappam.


Note:

1.You can also make it my soaking raw rice for 2-3 hrs,grinding to fine and leaving it to ferment for some hrs .But this is a quick/instant method.
