Pumpkin choco chips cake | Recipe with pumpkin


As i could see more pumpkin recipes i want to bake a cake/loaf with it and tried this.I don't want the maida/all purpose flour to dominate so made it with wheat flour.I just added an egg while blending it was soft but as i baked it ,it was not soo soft like what i expected but fine.Next time will add 2 more egg to get the correct texture.If making try to 2-3 eggs for a great super soft one.



Ingredients:


  • wheat flour-1 cup
  • APF/maida-1\3 cup
  • pumpkin puree-1\2 cup(refer notes)
  • Melted butter/oil- 1\3 cup
  • egg-1
  • baking powder- 1\2 tsp
  • baking soda-1\8 tsp
  • light brown sugar-1\4 cup
  • spice powder-1 tsp(cinnamon,nutmeg)
  • vanilla essence-1\2 tsp
  • choco chips-1\4 cup





Method:

1.Cream our butter with sugar well.Sieve both flour with baking soda and baking powder.powder cinnamon and nutmeg in a mixer.Add a tsp of it to the sieved  flour.

2.Add an egg to the creamed butter-sugar and beat well.Slowly add the dry ingredients to it and mix well.

3.Add choc chips and vanilla essence and gently fold.



4.Pour it in to the greased loaf pan and bake it in pre heated oven for 35-45 mins or till a tooth pick inserted come out clear at 180 deg C.



5.Cool it on wire racks and then slice it.

Note:

1.I just boiled the pumpkin pieces with enough water till it becomes soft.Then ground the cooled,cooked pieces to get the puree.

2.Cooking time may vary for oven.

3.My cake was very less in sweet try to add 3\4 cup.you can use normal white sugar too.
