Pumpkin Erissery | Side Dish for Rice | Onam sadya Recipe

I don't need to say much about pumpkin as everyone knows more about it and this kootu is easy to make and will taste yummy.


Prep.Time- 10mins, cook time- 10mins

Ingredients:


  • Pumpkin cubed-from 1\4 kg
  • Grated coconut- 1\3 cup
  • Green chilly-2
  • Jeera- 1\2 tsp
  • Turmeric powder- 1\4 tsp
  • Salt to taste.


To temper:


  • Oil- 2 tsp
  • mustard- 1\2 tsp
  • curry leaves-a spring


Method:

1.Cut the outer hard skin of the pumpkin and the inner flesh too.Chop it into small cubes.



2.Cook the cubed pieces with some water till its cooked.Meanwhile in a mixer add grated coconut,green chilly,jeera and turmeric powder and grind it to a coarse paste,don't add water.





3.When the pieces are cooked add the ground mix and salt to it and let be in heat for 2-3mins and switch off.

4.Heat oil in a pan and temper it with the ingredients under " to temper" and add it to the dish.




Serve it with rice.









Note:

1.Don't over cook the pieces as it will turn mushy.
