Vegetable Biryani | Easy Method | One Pot Meal | Easy Lunch Box

Having kids at home,daily have  to think and do different rice variety for their lunch box.Now a days it has become difficult for my son to make eat his lunch but no problem with my daughter.Coming to this recipe on fine morning my daughter asked vegetable rice for her lunch box,made it.Try out this easy rice.



Ingredients:

Basmati rice- 1 cup
Water- 2 cup 
Mixed vegetables- 1 to 1 1\2 cup
            (carrot,beans,green peas,cauliflower,potatoes)
Onion-1 thinly sliced
Green chilly-1
Ginger garlic paste- 1 tsp
Garam masala/briyani masala- 1 tsp
Turmeric powder- a pinch
Vegetable stock-1( dehydrated cubes)(avaliable in all departmental stores)
Salt to taste
lemon juice- 1 tsp(optional)

To season:

Oil+ ghee- 1 tbsp
Bay leaf-1
Clove,cinnamon,Cardamon-each 1
Cashew- few




Method:

1.Clean basmati rice and soak in water for 20 mins,then drain it.

2.Heat oil and ghee in a pan/cooker,add all whole spices and saute.Then add sliced onions and saute for a while.

3.Add ginger garlic paste,saute till the raw smell goes,then add green chilly followed by all vegetables.add the veg.stock,garam masala ,turmeric powder ,salt and saute for a while.

4.Add 2 cup water ,close and bring to boil,simmer it add the drained rice,close it and cook till done.Lastly add lemon juice and switch off.

5.Garnish with some ghee fried cashew.


Serve with any raitha or pappad or pickle.

Note:

1.To get more flavour u can add mint leaves also.

2.As i am giving it for kids i have restricted the use green chilly,add more if u want more spicy.You can add a tsp of red chilly powder & coriander powder also.

3.If u don't have veg,stock u can avoid it.

4.You can make it in rice cooker/pressure cooker,in cooker keep for 3-4 whistles.
