Sweet Corn Tikki / Cutlet | Healthy evening snack

I  bought two corn and it was lying on my fridge for a long,i just don't want to boil and eat,want to make something different.Yesterday evening tried this,my daughter liked it very much,she say mummy i have become fat now eating more.Do try this and i am damn sure kids will love.







Ingredients:


  • corn kernels- from 2 corn
  • Sandwich bread-3
  • onion-1
  • green chillies-2
  • Ginger minced-2 tsp
  • cilantro/coriander leaves
  • Corn flour- 1 tsp(optional)
  • Fennel seeds- 1 tsp
  • chat masala- 1\2 tsp
  • Salt to taste
  • Oil as  needed


Method:

1.Finely chop the onion and green chilies.

2.Microwave the two corn for 5-6 mins.With a knife shred the kernels carefully.

3.Grind the corn  in the mixer to a coarse texture.dip the bread in water and squeeze out the water between your palm.

4.Add the squeezed bread,corn mix,onion,green chilly,ginger,fennel seeds,corn flour(if adding),chopped cilantro,chat masala and salt.Mix everything well and make small lemon size balls.

5.Heat oil in a pan/griddle .Take a ball press it flat in ur palm and place it on the pan.

6.Flip on the other side when one side is cooked.Do the same for all balls.

Serve with ketchup/sauce.We just had it alone.



Note:

1.You can boil the corn on stove/gas also.since in MW its quick i made so.

2. You can use breadcrumbs and roll over it and shallow fry,i didn't do since i don't have.

3.You can increase the spice level.

4. You can use readily available frozen sweet corn also.

5.Can add any boiled vegetables to it also.
