Beef biryani with step by step pictures and video recipe.

Ingredients:


  • Beef- 1\2 kg
  • Basmathi rice- 2 cup
  • Water- 4 cup  + 1\2 cup
  • Ghee +oil - 2 tbsp+ 1 tsp
  • Cashew nut & pine nut- 1 tbsp r more
  • Bay leaf-1
  • Cinnamon,cardamon,cloves- each-2
  • Onion- 1 big
  • Tomato-1
  • Ginger garlic paste- 2 to3 tsp.
  • Red chilly powder- 1 tsp
  • garam masala- 1 tsp
  • Salt to taste


To grind:


  •  1\3 cup mint leaves
  • 1\3 cup coriander leaves
  • 3 green chilly



Method:

1.Cut beef and clean well.Add 1 tsp of ginger garlic paste,1\2 cup water, and pressure cook it for 2-3 whistle(see notes).

                               

2. Grind the three ingredients under " to grind" to a coarse form, else you can add them directly also.Slice onion and tomato, keep all things ready.

3.In a big heavy-bottomed pan heat 2 tbsp of ghee+oil, add bay leaves, cloves, cinnamon, and cardamom and saute for a while.




4. Add the sliced onions and saute till it becomes translucent, add ginger garlic paste, add tomato after it and saute till it expel the juice.

5.Then add a tsp of the ground paste,red chilly powder, garam masala and salt. Saute for a while,add the cooked beef to it with water(if any). Wait till all water evaporate, then for 2 cup rice and 3 1\2- 4 cup water.check for salt,close with lid.



6.When the water begins to boil and the drained rice to it and cook in medium-low flame.when it is 3\4 done,keep it in dum.(see notes).



7. Fry cashew nut and pine nut in ghee, add to it.

Serve with simple onion raitha or any.




Note:

1. I usually by very tender beef (called veal) it just takes 5-10 mins to cook. Cook according to ur beef variety.

2. For dum, keep a dosa Tawa/griddle on the stove. place the dishpan/Kadai over it with a lid on.

3. Add spice according to ur taste buds.

4.I usually make biryani in pan,it comes correct for me,if u opt for a pressure cooker u can go with it. In that method pressure cook for 4-6 whistles depending on the meat variety.
