Theeyal | Vegetable Theeyal

Theeyal is gravy prepared with well-roasted coconut with spices, tamarind juice and any or mix of vegetables. Any vegetables can be used but the best would be brinjal, yam and drumstick.
My mother is a great cook, who lives in our soul is a great expert in making this theeyal and especially she loves to make it when we are planning for a picnic. On those days very very early in the morning she would get up & with nobody's help, she alone would do all.I think as a daughter I have done something similar to it, but nothing matches my mum's taste.

Ingredients:
  • coconut pieces- 1/3 cup
  • cumin seeds/jeera- 1 tsp
  • pepper seeds- 1 tsp
  • dry red chilli-3-5
  • coriander seeds- 3 tsp
  • garlic pods-5
  • onion-1  ( small onions -7)
  • turmeric powder-1 tsp
  • tamarind-1 lemon size
  • oil-2 tdsp
  • salt to taste
  • vegetables-1 cup(yam ,bringal,drumstick) else u can add other vegetables too.if this suits well.
  • mustard- to temper
  • curry leaves.



Method:

1.soak tamarind in hot water & take juice.

2.cut veggies, keep aside.  1/2 cook yam with some water.

3.In a pan roast coconut with all things(jeera, pepper, chili, coriander,garlic) till nice aroma comes.
cool it and grind to a fine paste with water in a mixer.

4.In a kadai, add oil followed by mustard And curry leaves, when it splutters add onions when it changes color add cut brinjals and saute well.

5.Then add ur ground paste , tamarind juice, salt , water & bring to boil.when it starts to boil add ur 1/2cooked yam& drumstick.mix well.

6.cook till it becomes little thick.

7. Your gravy is ready. this gravy suits well for long travel as it will not gett spoiled since coconut is fried well&ground.



Notes:

1. You can add veggies of your choice. But see that yam and brinjal are there in it.
