Mixed vegetable- Aviyal (kerala style)


I like aviyal more because it has all vegetables & it taste good.Mostly in our side if veg is the menu for marriages they use to keep this.Good combination with rasam or any sambar.Try it & you too will like the most.




Ingredients:


1.Mixed veg tables- 1 to 2 cups(cucumber,yam,bringal,carrot,cluster beans or beans,raw plantain,drumstick)
2.coconut grated-1 cup
3.green chilly-2 - 4 according to your spice level
4.jeera/cumin seeds- 1 tsp
5.turmeric powder-1\2 tsp
6.garlic pods-2(optional)
7.salt to taste
8.curry leaves
9.oil  to temper ( preferably coconut oil)
10.mustard seeds to temper



Method:

1.Clean & cut all vegetables.Cook in a kadai with  little water.

2.Grind coconut with jeera,garlic,green chilli,turmeric powder to a coarse.


3.When the vegetable is 3\4 th cooked add the ground paste add salt & mix well.

4.Cook for about 3-5min  then remove from flame.


5.Temper and add to this.


Aviyal is ready.


Note:

1.After removing from flame u can add whisked curd to it when it cools a bit.
